Cabbage Thoran




Cabbage is a very healthy vegetable that is more often used for making a variety of dishes. Sometimes we add them in noodles, sometimes it goes well with soups and at times become a tasty side dish with rice. The peculiarity of Cabbage is that it can be consumed even without cooking. You can try making salads by adding shredded cabbage with other vegetables, with a bit of salt. It does make the salad taste good and look special. Trying out easy cabbage recipes can give your family better health benefits. 


Cooking cabbage can be sometimes very tricky. If you over cook the vegetable, you tend to lose the nutrients and the taste as it cooks very fast. So when you cook cabbage, switch off the flame when the vegetable is not fully cooked to gain that glossy look. A bit of crispiness is good when you cook cabbage.


Making the perfect Cabbage thoran is very easy. usually we tend to make use of the traditional techniques for making thoran that sometimes makes the taste a bit boring when used more often. So for a change, slight alterations are made to make it’s taste enhance a bit.


Ingredients



·         Cabbage – ¼ of a large cabbage (Serves 4)
·         Onion – 1 large
·         Green chilly – 2 small
·         Garlic – 2 cloves
·         Coconut gratings- ¼ cup
·         Turmeric powder – ¼ tsp
·         Cumin seed powder – ¼ tsp
·         Mustard seeds – ¼ tsp
·         Curry Leaves
·         Salt
·         Oil


Method



·         Finely chop the cabbage. You can make the use of a food processor or a grater if you want it get a finer look
·         Chop the onions and keep aside
·         Place a pan on the stove and heat it
·         Pour 2 tbs of oil to it
·         Add the mustard seeds and pop them
·         Now you may add the curry leaves
·         The grated coconut can be added directly to the oil without grinding in the mixer
·         Heat the coconut for 5 min. Here you are slightly roasting the coconut grating. A pleasant aroma will fill within 5 min in the kitchen. Make sure you do not roast it to a brown color. coconut grating should not lose its color.
·         Now add the finely chopped cabbage and onions to the slightly roasted coconuts.
·         Add turmeric powder, finely chopped green chillies and garlic into the pan
·         Mix all ingredients well.
·         Now add sufficient quantity of salt and mix well
·         Close the lid for 5-10 min
·        

   
           Open the lid after 10 min and serve with rice. 
You will be surprised to find that the cabbage thoran would taste excellent while following this technique. Care should be taken not to overcook the cabbage and not to roast the coconut gratings too much. As usual, you must take care while adding salt. 


This side dish will go well with rice. But you can try them with chapattis if you prefer eating a dry accompaniment. Getting the coconut grating roasted can enhance its taste to a very large extent.
