Whenever I have a good amount of
Beans, Carrots and Beetroots in my refrigerator, I am tempted to make a thoran
that contains all these three vegetables. This mixed thoran is a real delight
for the taste buds since it has a blend of all three tastes in the right
proportion. You can even make a mixed thoran by adding Cabbage to this. This
colorful side dish can attract kids a lot and you can tempt them to eat their
food.
This colorful vegetable side dish is extremely
tasty as well as healthy too, as it is loaded with veggies. Make sure that you
chop the vegetables into fine pieces. You may use a food processor for the

Ingredients (Serves 4)

Carrots-
2 nos
·
Beans
– 250 gm
·
Beetroot
– 1
·
Onion
– 1 large
·
Garlic
– 2 cloves
·
Green
chilies- 2 medium
·
Coconut
grating – ¼ cup
·
Turmeric
powder – a pinch
·
Salt
·
Oil
·
Curry
leaves
·
Mustard
seeds
Method
·
Clean
the vegetables in salt water
·
Then
wash them in plain water
·
Cut
the vegetables into fine pieces
·
Take
a pan and heat it
·
Pour
oil when the pan is hot enough
·
Add
mustard seeds and wait for them to pop
·
Now
add curry leaves to the hot oil
·
Add
the finely chopped vegetables into the pan
·
To
this, add the finely chopped onions
·
Add
the right amount of salt and sauté for 2 min
·
Close
the lid for 1 min
·
In
a mixer jar, add grated coconut, green chilies, garlic cloves and turmeric
powder. (If you want you may add 3 shallots too, for enhancing the taste)
·
Run
the mixer for 1 or two sec and keep aside
·
Add
the coconut mix to the pan with vegetables
·
Mix
well and close the lid for 5 min
·
Make
sure that you Sauté them occasionally between 5 min to avoid burning the dish
·
After
10-15 min, your tri color thoran will be ready to serve
·
Serve
with rice and curries
