In any sadya, the side dish which
served with Pulissery is Olan. Olan is a very plain dish that is very simple to
make and tasty enough to make your sadya rocking. Olan is made out of White
Gourd or Kumbalanga, as it said in my mother tongue Malayalam, is actually a
vegetable that is used for making sambar. When the kumbalanga is used for
making olan, you might be guessing that this could be a very plain dish. As a matter
of fact, this is a plain simple dish, but when prepared with your whole heart
and sprinkled with loads of love, you can make this dish a wonder dish.
So here you are the recipe for the

Ingredients
·
White
Gourd/Kumbalanga – diced – 1 cup
·
Black
eyed beans/Van payar – ¼ cup
·
Ginger
– 1 inch piece
·
Green
Chilies – 3
·
Coconut
milk – Thick milk– 1 cup
·
Coconut
milk – Thin milk – 1 cup
·
Salt
Method
·
Dice
the White gourd into cubes
·
In
a pan, add the White gourd or kumbalanga with a cup of thin coconut milk, green
chilies and ginger paste. Add some salt and switch on flame. Close lid and cook
for 5 min
·
In
a pressure cooker, add the black eyed peas or van payar with a bit of water and
salt and allow it to cook
·
Switch
off both the stoves
·
Add
the peas to the white gourd mix well
·
Add
coconut milk (Thick ) to the white gourd
·
Check
salt
In a pan, add some oil, put some mustard seeds, pop them and add curry leaves
I Garnish the dish with oil and cracked mustard seeds

Serve
with rice and pulissery
