Mambazha Pulisseri - The Sweet Combination With Rice






If you want to try out something different with rice, you may go for a Mango Pulisseri or Mambazha Pulisseri. You can eat rice without any special dish if you make mambazha pulisseri for lunch. Usually this type of pulisseri is made with small mangoes that are popular in the market as ‘pulisseri manga’ or pulisseri mango. These are small ones and when they are ripe, does not have sweet taste like the rest other mangoes.



If you do not get Pulisseri mango, do not worry at all. You may try out the ripe ones available in the market. Actually I love to make mango pulisseri with the big mangoes. That tastes superb and is much tastier than the pulisseri made with small pulisseri mangoes. Whenever we have guests at home I make it a point to make Mambazha Pulisseri with big ripe mangoes and those are well appreciated by all. So I give you a cent percent guarantee of successful pulisseri making if you try with any large sweet ripe mango. ;)




Mambazha Pulisseri is very simple to make, and it tastes great. Please note that when you are trying to make a mango pulisseri with not so sweet mangoes, especially with pulisseri mangoes, you can add a bit of sugar to get that lovely taste. Those of you who do not prefer sweet pulisseri may try out without adding sugar. So here you go the recipe for Mambazha Pulisseri right away for you guys.



Ingredients




·         Mangoes – If you are using Pulisseri mango, then take 4 to 6 ; If you are using ordinary ripe mango, 1 or 2 nos would do
·         Coconut grating – ½ cup
·         Curd    - 2 cups
·         Shallots – 6 nos and 2 for garnishing
·         Green chilies - 2
·         Water – To adjust the thickness
·         Turmeric Powder – ½ tsp
·         Cumin seeds powder (Jeera powder)- ¼ tsp
·         Garlic – 2 pods
·         Salt –
·         Oil



Method




·         Take a pan, add 2 cups of water
·         Peel the mangoes and add them without cutting if you are taking small pulisseri mangoes, or if you are using large ones, you may cut them to large pieces. Add the seed too
·         You may add the mangoes into the pan with water
·         Add a pinch of turmeric, a bit of salt and 2 green chilies
·         Close the lid and cook the mangoes
·         While the mangoes are being cooked, you can make the coconut mix
·         Take out the mixer jar and add grated coconut, 2 pinches of turmeric, cumin seed powder, shallots (6) and Garlic pods. Grind well add curd and grind it to a paste
·         Pour the coconut mix into a large vessel and add more amount of water to get a loose consistency
·         Add sufficient amount of salt to the mix  and check the salt
·         The mangoes will be cooked by this time
·         Add the coconut mix to the pan. Make sure the stove is in a low flame
·         Mix the coconut mix with mangoes and take care not to mash the mangoes
·         Check the salt and add the right amount of sugar (¼ tsp) if you do not find it sweet enough. Sugar also balances the sour taste. Those of you who do not want sugar may avoid it.
·         Do not boil the mix
·         Switch of the stove and pour it to the serving bowl
·         For Garnishing
·         Take a pan, add oil and crack mustard seeds
·         Cut the 2 shallots to slices and add to the hot oil
·         Fry till golden brown
·         Add curry leaves and switch off the stove
·         Pour this oil mix to the Pulisseri and serve with rice
While pouring mango pulisseri, make sure that you put a piece of mango with the pulisseri. This pulisseri can make your “Sadya” a grand success. So try it out and ENJOY!!
