Simple Coconut Egg Curry

Eggs in coconut gravy is a common curry in Kerala. It is a breakfast special and is served with appam or dosa. What I find in this curry is that it is the simple curry that usually has saved me a lot in the mornings. Usually i prefer vegetable stew or meat stew with appam. Those are the curries that take some amount of time for preparation. But this one is a savior, and i find it very easy to make an egg curry that goes pretty well with appam. The curry usually takes to about 10 to 15 minutes maximum for preparation. It will include the boiling of eggs too. Try this side dish and make your breakfast quick, healthy and tasty.
